Recipes
I will be digitalising my recipes on a rolling basis after taking pics.
Important tips:
- Only use virgin cold pressed oils. I cook 99% with extra virgin olive oil.
- Develop ingredient literacy intuition. E.g. for dark chocolate: cocoa, cocoa butter, and sugar. Question any other ingredient (of course, almonds are fine if you're buying dark almond chocolate).
- Buy proper cooking utensils. Avoid gimmicks; own good basics: proper knives, wood cutting board, stainless steel pans & pots, cast iron skillets. Quality over quantity. Ooh and bowls, I love bowls.
- Learn proper knife technique. In the same way you have to learn touch typing if you work with computers.
- Practice mise en place, especially for longer recipes.
